tired of boring chicken tenders?


DISCLAIMER: alright. so to clear up any confusion, if food isn't the lowest carb possible, i can't eat it. tricky? yes. annoying? yes. is there anything i can do about it? no. so if you're looking for stories about decadent chocolate cream pie, go find another blog.


so today while i was sitting on my couch getting hungry, i started to think about what low carb lunch i could prepare with the ingredients in my fridge and freezer. when lacking ideas and ingredients, i usually hit the chicken tenders. boring chicken tenders in some olive oil. throw some seasoning on it. slap it on a paper plate and bam, you're done. but that's just so depressing. i mean, how many times can i eat chicken tenders this way? how many lunches go by where i neglect the other ingredients in my pantry, only to season the things with pepper? too many. so today i decided to try something out. and i'm glad i did:


Ingredients:

8 chicken tenders. or cutlets. essentially the same thing but 'cutlets' sounds way more classy.

salt. sea salt if you have it.

pepper

1 cup mayonnaise don't use miracle whip.

1/4 cup fresh lemon juice. a tad less than 1/4 cup is actually better.

2 garlic cloves, minced remember, 1/2 tsp=1 garlic clove

2 scallions chopped scallions are green onions. again, classy. use the green tops too.


1. ok first defrost the chicken if the chicken is frozen. pat it dry if it's wet. just on a plate, sprinkle salt on both sides of the chicken. if you're using sea salt, go easy. it's strong.

2. in a bowl (small-medium) mix up the remaining ingredients. put at much pepper as you feel like. i love pepper so i put a lot. mix it all up. i used a whisk. it worked swell.

3. put the chicken on a foil lined baking pan and spread the mayonnaise mixture on both sides of the chicken using a spoon. you'll be tempted to glob it on but go easy.

4. if you have time, put it in the fridge to marinate for an hour or so. if not, don't do that.

5. preheat the oven to 350 F. put the chicken on the foil lined pan we talked about and put them in the oven for 25-30 minutes.

6. at the very end of the cooking time, if you want to, turn the broiler on just to give the chicken some more heat. but watch the chicken like a hawk, or it will burn.

7. the recipe is called "crispy chicken cutlets". i won't lie to you, they don't get very crispy. but they do have excellent flavor. and it helps to dress up the boring chicken tenders we've all grown to be bored of.
